We found a great recipe that incorporates nutrient-rich ingredients like quinoa that you can make in just a few minutes. Happy snacking!
Quinoa with Black Beans and Corn
Cook quinoa according to package directions. Combine beans, corn, red bell pepper and cilantro in a large bowl. Stir in cooked quinoa.
Combine lime juice, oil and cumin in a small bowl. Stir in chipotle pepper if desired. Toss with quinoa mixture. Season with salt and pepper to taste. Serve warm or chilled.
