A Simple Snack Recipe to Serve In a Snap

This spring take your health into our own hands with the help of Target. With a newly expanded grocery section, making your own snacks is even easier to feel fit and full. We found a great recipe that incorporates nutrient-rich ingredients like quinoa that you can make in just a few minutes. Happy snacking!

Quinoa with Black Beans and Corn
1 cup Archer Farms Quinoa
1 can (15.5 oz.) black beans, drained and rinsed
1 can (15.25 oz.) sweet corn, drained
1 red bell pepper, diced
1/ 4 cup cilantro, chopped
3 tbsp. lime juice
2 tbsp. olive oil
2 tsp. ground cumin
1 chipotle pepper in adobo sauce, finely chopped (optional)
*Serves 4

Cook quinoa according to package directions. Combine beans, corn, red bell pepper and cilantro in a large bowl. Stir in cooked quinoa.

Combine lime juice, oil and cumin in a small bowl. Stir in chipotle pepper if desired. Toss with quinoa mixture. Season with salt and pepper to taste. Serve warm or chilled.
