I have a lot of fun in the kitchen experimenting with exotic ingredients and rich, complex flavors, but I’ll tell you a secret; my favorite dishes are healthful, quick, and simple, letting the flavor of the star ingredient shine through and leaving me feeling light on my feet.
Accordingly, I am always on the lookout for recipes that use a handful of healthful ingredients and a minimal amount of time, but that don’t skimp on flavor. With only six ingredients, this twenty-minute salmon dish fits the bill for a quick, healthy, and simply delicious meal.
Mediterranean Salmon
(Serves 4)
1 T. olive oil
1 T. fresh lemon juice
1 t. fresh rosemary, chopped
4 pieces salmon, 4 – 6 oz. each
Sea salt
Fresh ground pepper
Lemon slice or rosemary sprig for garnish (optional)
Preheat your oven to broil and position the oven rack so that the salmon will be 4 - 5” from heat.
Line a broiler pan with foil (for easy clean-up) and spray the top with oil.
In a shallow bowl, whisk together olive oil, lemon juice, and rosemary. Add the salmon and let marinate 10 minutes (optional).
Place the salmon on the broiler pan and sprinkle with salt and pepper to taste.
Broil the salmon 7 – 12 minutes, depending on thickness (check after 7 minutes and if the fish is browning too quickly, move it down a rack or cover with foil). Salmon is done when center is opaque.
Garnish with lemon slice or sprig of rosemary for a final touch.
This dish is delicious with mache (lamb’s lettuce) dressed in a light vinaigrette and a side of whole grains.
